Prep Time – 5 minutes
Cook Time – 30 minutes
- 3 red peppers
- 300g mushrooms
- 1 packet feta
- 4 tomatoes
- Optional: courgette, aubergine or leftover cooked meat
STEP 1: Preheat the oven to 180°C.
STEP 2: Chop all the vegetables in thin slices. Bring out an oven proof dish with a lid, and start layering the vegetables and feta. If you have leftover sausages/veggie sausages then layer those in too. Make sure the final layer is feta.
STEP 3: Ideally, put a lid on the dish and leave this in the oven for 20-30 minutes. You could also cook this without the lid, but the final result will not be as good.
STEP 4: Serve!
