Spelt Pancakes

Prep Time – 5 minutes

Cooking Time – 5 minutes

Ingredients (Serves 1-2)

1 cup almond milk

1 cup spelt flour (or wholemeal flour)

1 tsp vanilla essence/powder

1 tbsp sugar

Optional: 2 tsp baking powder

Method

STEP 1: Mix all ingredients in a bowl. 

For American style pancakes: add the baking powder. 

For crepe style pancakes: leave the baking powder out and add another 50ml of almond milk in order to create a thinner batter.

STEP 2: Cook the pancakes over medium heat for 3-4 minutes on each side. Serve with maple sirup and fresh/frozen blueberries.
