Salmon & Noodles

Prep Time – 5 minutes

Cooking Time – 15 minutes

Ingredients (Serves 2)

2 salmon or trout fillets

2 portions of rice noodles

1 bag of lemon and ginger tea

1 clove of garlic, thinly sliced

2 thin slices of ginger

1 tsp honey

1 lemon

1 tbsp butter

1 broccoli

Optional: green beans or asparagus.

Method

STEP 1: Preheat oven to 180°C. Place the fish fillets on a piece of aluminum foil and cover them with sliced ginger, garlic honey and juice of 1 lemon. Wrap the foil like a package and cook in the oven and cook for 15 minutes.

STEP 2: Fill a pan halfway with water and bring to a boil. Add the teabag and vegetables and cook for 5 minutes. Fish out the vegetables, place on a tray and add the butter on top before placing it in the oven.

STEP 3: Add the noodles to the same pan that you cooked the vegetables and cook for 5 minutes. Take the fish out of the oven and scrape the flesh ff the skin with a fork. Pour the liquid from the fish into a bowl and add the noodles, vegetables and fish. Mix well and serve.
