Red Lentil Soup

Prep Time – 5 minutes

Cooking Time – 45 minutes

Ingredients (Serves 3)

350ml red lentils

700ml water

1 stock cube (vegetable or chicken)

1 onion

2 cloves of garlic

1 tbsp Tomato puree

2 tbsp Butter

1 tbsp Dried mint

1 tsp Chilli flakes

Method

STEP 1: Wash the lentils until the water runs clear. Add the whole onion, garlic and lentils to a pan, then add the water. Bring to a boil and lower the heat to low and cook the lentils covered with a lid.

STEP 2: After 20 min add the stock and stir. Cook for another 20-30 min, if the soup is too thick add more water. Once the lentils are ‘dissolving’, the soup is ready. Fish the onion and garlic out of the soup.

STEP 3: In a frying pan, heat butter, mint, tomato puree and all the spices. Stir well to create a paste. Drizzle this in the soup, or on top of each portion. Serve with bread and a squeeze of lemon.
