Persian Herb Omelette

Want to try a new take on an omelette? This delicious Persian Herb Omelette is a fantastic and fast meal that is great for busy people!

Prep Time – 5 minutes

Cook Time – 10 minutes


(Serves 1)

  • 3 Eggs
  • Handful parsley, dill and/or coriander
  • Salt and Pepper to taste

STEP 1: Finely chop your herbs and add to a bowl with the eggs. Whisk together until the mixture is smooth.

STEP 2: Cook as an omelette or in an oven proof dish.

For the omelette: Heat some butter in a frying pan over medium/low heat, add the egg mixture and cook for 5 minutes until omelette is set, but still slightly runny.

For the oven proof dish: Preheat your oven to 180°C. Pour the mixture into a small non-stick dish and cook in the oven for 10 minutes.
