Cheese & Vegetable Casserole

Prep Time – 5 minutes

Cooking Time – 25 minutes

Ingredients (Serves 2)

300g mozzarella cheese

100g feta

2 chilies

3 tomatoes, sliced

3 Peppers, chopped

A pinch of oregano

Optional: 2 eggs

Method

STEP 1: Preheat the oven to 190°C. Slice all the vegetables, mozzarella and feta in thin slices. Layer them in an ovenproof dish with a lid, making sure the top layer consists of mozzarella and feta.

STEP 2: Cover the dish, place in the oven and cook for 20 minutes. 

Optional: Take the dish out and crack two eggs on top, putting it back in the oven for 5 more minutes.
